Ingredients:
5 medium Yukon gold potatoes, diced in large chunks
6 hard-boiled eggs, roughly chopped
2 celery stalks, diced
1 large or 2 smalls shallots, diced
2 Tbsp rice wine vinegar
1 cup mayonnaise
2 Tbsp yellow mustard
2 Tbsp dill relish
1 tsp sweet paprika
1 drop Celery Seed Vitality essential oil (optional)
¼ tsp dried dill or 1 drop Dill Vitality essential oil (optional)
Salt and pepper to taste
Directions
Bring a large pot of water to a boil and cook potatoes until tender, about 20 minutes. Drain potatoes and add them to a large bowl. Slightly mash potatoes with a hand masher, keeping many large chunks visible. Add the eggs, celery and shallots and stir. In a separate bowl, mix together vinegar, mayo, mustard, dill pickle relish, paprika, salt and pepper, and Vitality oils if using. Mix well and add to the potato mixture. Add additional salt and pepper to taste. Serve warm, room temperature or cold.
