Ingredients
- 1 tablespoon orange zest (from about 1 ½ oranges, preferably organic)
- 5 cups old-fashioned rolled oats
- 1 ½ cup raw almonds, chopped
- 1 teaspoon ground cinnamon
- ½ cup canola oil
- 1 cup of pure maple syrup
- 1 tablespoon vanilla extract
- 1 cup raisins
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, orange zest, almonds, raisins cinnamon and vanilla. Stir to combine. Pour in the oil and maple syrup, and mix well.
- Pour the granola onto a prepared baking sheet lined with non-stick foil. Spread the granola into an even layer. Bake for 15 minutes and stir. Bake another 30 minutes, stirring halfway, until the granola is turning lightly golden in color. Pull out of the oven and let cool. The granola will crisp up as it cools.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or keep it in the freezer for longer shelf life.
Recipe yields about 8 cups of granola
