Ditch the Long Lines and Tortilla with This Easy Burrito Salad

Burritos may be the ultimate handheld meal, but an extra large tortilla and your inability to control just how much of each ingredient you get can make that convenient burrito skyrocket with calories and fat. Ditch the tortilla and make your own burrito salad at home.

Ingredients

  • 1 1/2 cups chopped lettuce
  • 1/2 cup brown rice, cooked
  • 1/3 cup black beans, cooked
  • 1 cup vegetables (try tomatoes, red peppers, onions, or roasted sweet potatoes)
  • 2 tablespoons chopped avocado
  • 3 tablespoons salsa
  • Sprinkle of low-fat cheese

Directions

Place lettuce in large Tupperware container and add the rice and beans. Top with vegetables, plus salsa and cheese (if desired). Eat cold or microwave for 20 seconds and serve.
